what if your grease trap fails inspection unexpectedly?

So, um, imagine this—you've got a small diner, things are running smooth, then bam, inspector comes in and your grease trap totally bombs the inspection. What's your immediate move? Panic mode or something else? Curious how you'd handle it.

Had something similar happen when we renovated our kitchen—inspector flagged the grease trap outta nowhere. Honestly, best move is to skip panic mode, call a pro immediately, and get it sorted. Costly lesson learned...but inspectors appreciate quick action over excuses.

True enough, but sometimes inspectors can be overly picky or inconsistent. Had a buddy whose grease trap passed inspection twice, then randomly failed on the third visit—same inspector, same setup. Makes you wonder if standards shift or if they're just having an off day...

Has anyone else noticed inspectors being inconsistent like this, or is it usually pretty straightforward?
