Saw this news story yesterday about a local diner that got shut down temporarily because their grease trap overflowed and caused some nasty plumbing issues. Apparently, the owner said they didn't have the right tools or know-how to keep it clean properly. Made me wonder—how many small restaurants or even home kitchens are actually prepared to deal with this stuff? I mean, I barely know what's lurking under my own sink half the time, haha. Is this a common issue people run into?
