plumbing nightmare scenario—what would you do?

Okay, picture this: it's Friday afternoon, around 4:45 pm. You're just about ready to call it a week, maybe grab some takeout and chill. Then your phone buzzes and it's your buddy who runs that restaurant downtown. He's freaking out because there's water flooding the kitchen and dining room floor, customers are getting annoyed, and his regular plumber isn't picking up (probably already at happy hour, lol). He asks if you know anyone or anything that can help—fast.

Now, me personally, I know my way around basic home plumbing (fixed a leaky sink once or twice), but commercial stuff... that's a whole different beast. Like, where do you even start? Is there like an emergency hotline for this kind of thing? Or online guides or apps or something to at least temporarily stop the chaos until a pro shows up?

I mean seriously, in a situation like this—restaurant full of angry diners, water everywhere—would you wing it with some DIY moves from YouTube vids or something? Or is that just asking for more trouble? Curious how you'd handle this kind of plumbing disaster if it landed on your plate outta nowhere.
